Apple Cake with Cream Cheese Cream
- Whisk sugar and butter until light and fluffy. Add the eggs one at a time, beating well between each egg. Lightly toast the walnuts in a pan and chop them into smaller pieces. Grate the apples and mix them with walnuts and a bit of flour. Sift the remaining ingredients and gently fold everything together. Spread the batter in a baking pan measuring 20 x 29 cm lined with parchment paper on the bottom. Bake at 180 degrees Celsius for 20 minutes or until lightly golden on top. Allow the cake to cool.
- Whisk softened butter until fluffy, then add lemon juice and cream cheese and whisk until there are no lumps. Add powdered sugar and whisk the mixture well until it becomes light and fluffy.
- Thinly slice the apple using a mandolin slicer and arrange the slices on a baking tray lined with an Air Mat baking mat. Bake the apple slices in a preheated oven at 100 degrees Celsius until they are crispy and dry.
- Place the cake on a platter or similar. Spread cream cheese cream on the top and sides of the cake. Garnish with apple slices and edible flowers, or any other decoration you might prefer.
