Sticky Date Mini Cake With Gula Melaka Butterscotch Sauce, ‘Kek Kurma Butterscotch’
(Makes 6-9 small cakes, depending on your tin size)

- Preheat oven to 170°C.
- Grease loaf tins and line base with parchment paper.
- Soak dates in boiling water, add soda bicarbonate. Leave dates to soften for 10 minutes. Pour into a blender or food processor and blend until smooth.
- Add Lurpak Slightly Salted Butter, brown sugar and eggs and mix. Lastly add flour and mix until well incorporated.
- Pour into baking tins up to half full and bake for 20-35 minutes (depending on your tin size).
- Prepare the butterscotch sauce. Put all sauce ingredients into a small pot and bring to boil, whisking continuously, until smooth and thickened.
- Serve cake with sauce.
