Bánh Mì Pizza
- Slice the chicken into 2cm cubes. In a bowl, mix lemongrass, fish sauce, soy sauce, sugar, and lime juice/zest. Add chicken and marinate for at least 30 minutes. Cook the chicken on a baking sheet or in a pan until fully cooked. Cool and set aside.
- In a bowl, combine rice wine vinegar, warm water, sugar, and chili flakes. Stir until sugar dissolves. Add julienned carrot and cucumber. Season with salt and let pickle for 20 minutes.
- Preheat the oven to 220°C (430°F). Roll out pizza dough into two 10-inch rounds. Place dough on pizza trays or a preheated stone. Spread each with 1 ladle of tomato sauce. Top with cubed mozzarella and marinated chicken.
- Bake pizzas for 10-12 minutes, or until the crust is golden and cheese is melted.
- Top with a generous amount of pickled carrot and cucumber. Garnish with fresh coriander, chopped roasted peanuts, and a drizzle of sriracha.
- Garlic, Chili, and Ginger: For an extra layer of flavour, fry garlic, chili, and ginger and mix into the tomato sauce before spreading on the dough.
- Marination: The longer you marinate the chicken, the more intense the flavour will be.
