Grilled Cheese
Grilled cheese is an American classic, and for cheese lovers, it's the ultimate sandwich. Load sliced bread with plenty of cheese and a hint of chipotle paste for a spicy kick. Serve with tasty sides like fresh peach salsa and paprika mojo rojo.
- Spread butter on both sides of the bread. Spread a thin layer of chipotle paste on half of the bread slices and add the cheese.
- Cover with the remaining slices of bread and grill until the cheese has melted and the bread is golden brown and crispy.
- Split the peppers and place in a baking tray with garlic cloves, olive oil, chilli flakes, salt and pepper. Grill at maximum temperature until the peppers are slightly blackened at the edges. Remove and allow to cool.
- Blend everything with the parsley into a medium-coarse mixture.
- Finely dice the peaches, roughly chop the capers and dill or parsley. Mix with rapeseed oil and vinegar. Stir and season with pepper.
