    Mozzarella Saltimbocca
  • Slice square cheese - half of one thick slice.
  • Carefully lie two pieces of prosciutto - top with sage leaf, add Mozzarella square slice and season with black pepper and thyme.
  • Carefully wrap into a parcel.
  • Pan fry in avocado oil until Prosciutto and Mozzarella starts to soften. Add a touch of butter.
  • Salad
  • Mix the rocket, fennel and artichokes together. Place on the Mozzarella Saltimbocca.
  • Sauce
  • Warm oil in to pan, gently fry garlic and tomatoes. Add pizza sauce, season with salt and pepper and sage.
