Seasonal Asparagus & Speck White-Based Pizza
    Marinate the Asparagus:
  • Use a vegetable peeler to slice the asparagus into thin ribbons. In a small bowl, toss the asparagus ribbons with olive oil, lemon juice, lemon zest, and a pinch of salt. Let the asparagus marinate for 10-15 minutes to infuse the flavours.
  • Prepare the Roasted Garlic Cream Sauce:
  • In a small saucepan, combine the cream and roasted garlic. Gently heat over low heat, stirring occasionally, until the garlic has softened into the cream. Season with black pepper to taste, then remove from heat. Blend or mash the garlic into the cream to create a smooth, fragrant sauce.
  • Prepare the Pizza Dough:
  • On a lightly floured surface, roll out the pizza dough into a 10-inch circle. Transfer it to a pizza tray or a preheated pizza stone.
  • Assemble the Pizza:
  • Spread the roasted garlic cream sauce evenly over the dough, leaving a small border around the edges. Sprinkle the cubed mozzarella evenly over the cream base. Drain the marinated asparagus ribbons lightly (so they’re not too wet) and arrange them evenly over the pizza. Finally, arrange the speck on top of the asparagus.
  • Bake the Pizza:
  • Bake the pizza in the preheated oven for 10-12 minutes, or until the crust is golden, the cheese is bubbling, and the asparagus is tender and slightly caramelized.
  • Finish the Pizza:
  • Garnish with fresh rocket leaves for a peppery, fresh contrast.

  • Speck Substitute: If speck is unavailable, you can use prosciutto or pancetta. Speck adds a unique smoky flavour that works beautifully with the creamy base and fresh asparagus.
