The Go Green Courgette Burger

- Grate courgette into a tea towel and sprinkle with salt and let sit for 5 mins before squeezing the juice out.
- Add the chopped herbs (dill & mint) to the courgette mix, with paprika, sumac, chopped garlic, add the egg and flour and mix.
- Drizzle olive oil into a warm pan, spoon two portions of the courgette mix into the pan and flatten into two round patties. Once fried, onto one courgette patty put on the cheese and the skyr. Take the other and flip on top of the cheese and skyr to create one filled patty. Flip out onto a tray and put into an oven until cooked through.
- To make the tzatziki, spoon all the ingredients together and season to taste. Serve the patty into a mediterranean style bun and serve with tzatziki on the side.
